EPA Alternative Control Technology Document for Bakery Oven Emissions (ACT) EPA 453-R-92-017, December 1992
This ACT document contains the formula for estimating bakery ethanol emission from bakery yeast fermentation. The calculation is also included in EPA’s AP-42 document. The ACT document has and is being used by bakers nationwide as they consider a bakery’s Potential To Emit (PTE). The use of this document continues to ebb and flow as permits renewals are taking place nationwide.
In 2007, ABA asked EPA to confirm use of the ACT document for bakeries and this has resulted in a continued dialogue with the Agency. More recently this issue has come up again directly from the Indiana Department of Environmental Management (IDEM) where the state was looking for emissions from ovens and proof boxes.
